i actually had a thread like this here... maybe on page 2 if not on page 1. similar post but slightly different (not because it's focused on road racing, but same concept applies).
you are correct in you can burn your clutch. that's why you don't slightly let off the clutch until you know the green is close to drop. it's probably easier on the drag strip since in road racing, the starter can be quick, or can be darn slow at the #1 board. which sucks cuz you're burning your clutch then.
as for revs, it actually varies by bike. what i noticed is the higher the size of engine, the lower the revs. i had my fzr400 taching at like 9 or even 10k at a race start. but since it's light, won't really do a 12 o'clock at start, i was good with it.
what bike you running? 600cc? probably 7-9K (9k tops). i think i have my 750 on 7k off the start. and the clutch just ever so slightly moving the wheel. it also depends on your gearing!
then it's a smooth roll on and letting go of clutch. my problem is i don't roll on fast enough.
